LAVENDER CAKE

This cake is simple and not so weird tasting like some may think. in fact its just your favourite butter cake recipe with lavender added and it just gives a new spin on the old butter cake. for an easier way just buy a butter cak pre mix pack and add the lavender and maple syrup.

225g (1 1/2 cups) self-raising flour
75g (1/2 cup) plain flour
150g salted butter, chopped and softened 
226g (1 cup) caster sugar 
1 1/2 teaspoons (7.5ml) vanilla extract
3 large eggs (minimum weight of 59g)
83g (1/3 cup) sour cream (about 35 percent fat)
166ml (2/3 cup) milk
2-3 tablespoons of chopped dry or fresh lavender (can add more or less)
2-3 tablespoons of maple syrup

Preheat oven to 150 degrees Celsius (140 degrees Celsius fan-forced).
Grease the side and base of a 20cm diameter  round cake pan. 
Line base and side of the pan with non-stick baking paper.

Combine self-raising flour and plain flour and set aside.

Using an electric mixer on low speed, beat the butter, sugar and vanilla together in a large bowl.

Increase speed to medium once the sugar is incorporated. 
Beat the mixture until it is pale and creamy 
Add the first egg to the butter mixture and beat on medium speed for about one minute. Repeat with the second, then the third egg. add maple syrup and sour cream, then mix 

Sift half the combined flours over the butter mixture. Add half the milk and beat for about 10 seconds until just incorporated. 
Add the remaining milk and sift in the remaining flour and lavender and beatfor 5-10 seconds to combine the ingredients.
over-beating the mixture may cause the cake to be tough.

bake for an hour and 5mins-10 mins or until cooked through

you can sprinkle sugar on top or ice. i used whipped cream, icing sugar and a little bit more of chopped lavender for mine.

Indian Kitchen

The place that is well deserved to being my first post. Indian Kitchen with its hot boxes and $7 curries ($5.50 for vegos)open every day of the year and with the best naans around, need i say more if you walk past any night of the week around the peak time (6pm-8pm) theres usually a line up out the door.

This place is worth it, not just because its cheap, and it hasn't changed prices the 4 and a half years I've been going, but the food is the best and in my opinion definitely beats other locals such as Punjabi Palace (naans dry, oily rice...$)
